I have changed it to two other Email addresses and they worked but our standard one email@example.com doesn't.
I have access to the Email Security system and can see all Email that are ever sent to that domain and JotForm hasn't sent anything else out for that Email address. If sent from outside of JotForm then it works as expected.

I have checked email log with email address you provided and I saw that all recent submission were failed.
Usually this means that email address is in bounce list. However that email address is not in bounce list.
Considering that Amazon rejected your emails sent to your email address I have remove it form Amazon Suppression List. After that I have submitted your form and Notification was sent successfully.
Did you received my test submission?
Also I saw that you set your own Email Address as Sender Email.
