I have a product choice, plus a required donation. Additionally, can i add an open ended donation option too?

You can add another product item and put 1 as the price. Enable the custom quantity box. You can hide the price using a custom CSS codes.

I have added the following custom CSS codes to hide the 1 dollar price:
#cid_9 > span:nth-child(8) > label > span.form-product-details {
display: none;
}
Another workaround would be to use a checkbox field for the product items. You can assign a calculation value for the options (http://www.jotform.com/help/301-How-to-Assign-Calculation-Value)
You can then calculate it: http://www.jotform.com/help/259-How-to-perform-calculation-in-the-form.
Now, add a textbox field that would serve as your donation box then calculate the total for the checkbox total and this textbox.
You can then pass the total to your Paypal payment field (http://www.jotform.com/help/275-How-to-pass-a-calculation-to-a-payment-field).
