However, it does not seem to update automatically in an autoresponder. What is the protocol in updates?

Yes, you are right about this one. If you add new field or update one of the existent fields, you need to update the "Autoresponder" or "Notification" as well. Please, check the basics of the "Compose Email" from the image below:
Alternatively, you can delete the current one and create a new one, it will get all the fields with the newly made changes. If you don't have advanced modifications on your "Notification" or "Autoresponder" emails, this could be the easiest way.
