If form fields are deleted, will it also remove the submission data as well?

I have an additional question.  We have received a few response on the form that have data in those fields.  If I delete those items, will that also remove the data from the responses that we have already received?  If so, do have another suggested option?  Thank you.

Yes your understanding it correct. If you delete any form fields or widget from your form, it will also delete the associated submission data as well. 

The only solution is that you should hide the form fields / widgets which you want to delete. You can select any form fields and hide it. Please check the screenshot below:
