I do not wish to change the email associated with our account, however, we received a message from a client who has reported a strange email response to her recent order. The email she received from us simply said, "undefined." It appears that there is a glitch in the automatic email reply system. How can I test this without actually making a purchase? Better yet, how can I fix it if there is, indeed, a glitch?

If I understood you correctly, in Autoresponder email that your user received was only "undefined" text. Is that correct?
I have cloned and tested form http://www.jotform.us/form/51375020494148 that you last modified, but I was not able to replicate mentioned issue. I received customized message that you added inside of you Autoresponder email.
Usually "undefined" text is shown when body of Notifcation/Autoresponder email is empty.
If your issue is still not resolved, please provide us ID of the form, so that we can inspect it and test it.
