my form https://form.jotform.com/60414995007153 has the box for entering the value on the left hand side of the "question" - but when the form is submitted the value ends of on the right hand side of the submission. I want it to 'show' as the points awarded "out of" the total possible points. For example, 2/2 or 3/5. How can I get the form to generate this format in my submission?

The way it currently looks on your form, is that the value is entered on the right side of its total:
Regardless of how it is shown on the form, in your submissions and in emails, any individual value/answer will always follow the label/question. This means that regardless of the alignment of the box on the form, in your submissions the value will be on the right side of its pertaining question.

I'm afraid that grading widget does not have such customization options where it could be changed to present its answers in another way, but if it helps, the grading widget will always show the total value at the bottom, in the format "you've got this grade / out of this total":
There is a similar widget where the box to enter the answer can be anywhere inside the question, and it will show in the same place in your submissions, which is the Passage Test widget. However, that widget is for textual entries and does not have automatic grading, such as the Grading widget does.
The grading widget can only display its results on the right side, following the question.
