We are an artist origination and currently use WordPress and Mach forms for our website and membership application. I am looking to move our website to Wix and I believe will have to change our forms to something else. Currently the data created from form applicants can be exported in an excel spreadsheet. From the form page I can select specific applicants or all and export the data.
It looks like your form can be uploaded to google drive in their spreadsheet. I can't tell from the questions in the forums if a different sheet or file would be created form each form that is filled out or if one spreadsheet is created and as each member fills out the registration form their data would be integrated into that one spreadsheet file.
With JotForm, you can also export the form submissions data to Excel http://www.jotform.com/help/44-How-to-Export-Form-Data-to-Excel. Other formats are also available like PDF and CSV.

And to answer your question, only 1 spreadsheet file will be created per form and it will automatically update the new submissions made from your form.
