I have designed a website for a towing company. Currently their request a tow form data is being sent to them via email. The owner of the site wants the data to go to his SMS, due to the unreliable nature of his email when he's on the road. Is there a way to do this? I've tried using the email to SMS feature on a generic form hosted on the site itself, sending it to XXX-XXX-XXXX@vtext.com , but it's not working

Yes, you can easily set your "Notification" to send SMS by changing its "Recipient E-mail" field as "XXX-XXX-XXXX@vtext.com". Please, see it from the below:
Of course, please don't forget to change the "XXX-XXX-XXXX" with the actual number. Also, please don't forget to check the service provider's settings for this operation, because this feature mostly related with the Verizon (in your case).
