I haven't received any notifications via email about 2 new form submissions. Is it because I received the submissions whilst 'jot form' was 'out of hours'? I'm based in the UK.

First of all, I need to clarify this there is no out of hours for JotForm, the service is open for 7/24, so the issue is related to the email services. When I check the email "firstname.lastname@example.org"'s log, I see that last two email has marked as "Failed":
However, the related email is not in the bounce list. In this circumstances, I suggest you to use your email service provider (SMTP) to send your emails with using your server. With that one, you can beat that problem completely. Please, note that you are currently using our default email service provider (email@example.com) which can lead these kind of results, when it is rejected.
To do that, please follow the instructions from How to Setup SMTP for a form page.
