I need for entries from my form to go to a different email address (different from the one associated with my account).
I've added a new user who has this email address.
Can I assign that user to that form alone?

Yes, you can change the email address on your email notifications to a different one, should you so desire.
To change your email recipients on your email alert, simply click the Reply-To and Recipient Settings button
After which, you should be able to view and change your sender name, sender email, reply-to email and see the Attach PDF of the same submission as well. You should be able to change the title of your notification also for your reference, as well as change the email recipient to which all emails will go.
After doing the necessary changes, you simply have to click the Finish button and save your form.
