Hello,
I haven't changed anything with my email account, however I'm now getting a SMTP error and can't set my email address for form responders.

There was an error on your SMTP configuration. Due to that error, our system automatically changed your email sender's address for your form ID 60965055598974 to noreply@jotform.com to prevent issues arising from your account.
Please log in to your JotForm account (http://www.jotform.com) to correct your SMTP configuration.

I would suggest you to check your SMTP settings, this link will help you with that: https://www.wormly.com/test_smtp_server.
Once you have confirmed that all it good, you will need to delete the current settings and then add the settings once again.
If this does not help you may also try following this guide:
How-to-Add-a-Custom-Sender-Address-to-an-Email-Alert
You will not need to provide SMTP settings, it will send you an email with the verification code and that's all.
