Hello, I am part of a small business that is looking to change how forms are currently developed on our website. We’ve had issues where spammers use our forms to send junk mail. Is there anything that JotForm does that stops unwanted spam from reaching us?

Jotform has certain methods for spammer to submit forms. I suggest you review an answer given by my colleague.
As you can see, the easiest is to place a Captcha field
I personally like to last suggestion in which includes a hidden field. If bots are used, it will fill all the fields, including the hidden. If you create a condition, which verifies if the field is hidden is filled or not. If it is filled then hide the submit button. This prevents bots to submit forms.
