I have followed previous advice but my option screens no longer look like that and in preferences advanced there is no longer a button.

This feature is not enabled on the new "Preferences"; but we can easily open a old "Preferences" by adding a "&old" parameter to the end of URL. Please, see the example from the below:
After this step, you can easily enable the option called "Hide Empty Fields on Emails".

Hide Empty Fields feature will be added. However I am not sure if it will be added to new Preferences wizard of new Emails wizard.
For now like my colleague suggested you can use old "Preferences" by adding a "&old" parameter to the end of URL.
