My form is http://form.jotform.com/form/20494448873.
I need the user to be able to print the form and sign it, but some users have indicated that the data they enter disappears when they try to print. I don't know what browsers they are using or their security settings or what the heck they're doing, so my solution is to create an autoresponder that provides a link to the filled pdf so that they can print that.
Now, however, I cannot for the life of me get the autoresponder to work ... please help ...

I am a new user to JotForm. But I can't help but notice your question,
I was able to test this autoresponder just a while ago, and I was able to make it work.
I just followed this steps.

You can also add Print button to your form to enable users print it.

but I think the issue with her form have something to do with different kind of email clients (ms outlook, outlook express, webmails) and the varying settings of each email clients.
i too have experienced this before wherein a fill up form is embedded within an ms outlook message, there's a tendency of different behavior for the form.. i.e. button not working, misaligned form, disable box..ect. if this is the case, it will be impossible to print the form then.
what she did was also my solution, an attached filled pdf file can be easily printed.

There are three email fields added in your form the first two are for the Parent /Guardian contact information and the third is located at the end of the form to which the Printable form is to be sent. With the layout of the fields in your form I have the perception that the email at end of the form is the recipient of the autoresponder. If this is the case then the autoresponder recipient settings should be updated, currently what I am seeing in your settings is that the recipient is set to Email Address this refers to Parent/Guardian contact information and not the email address at the end of the form.
To change the recipient settings for the autoresponder please do the following:
1. Login to JotForm
2. Click on 'Setup & Embed'
3. Select 'Email Alerts' and select the Autoresponder
4. Click on Reply-to and Recipient settings,
5. In the Recipient Settings please update it to the third email address which has the following label:
Please indicate the email address to which a printable version of this form should be sent:Hope this information helps.

In reviewing again, I now think that my issue might be that our administrator completes the first part of the form, then sends the link to our "clients" to complete the remainder of the form. In testing the autoresponder, I was editing exiting forms, which were created before I added the email field to which the form should be sent. As such, I will create new forms to send to the clients.

I've done some more testing and am wondering whether the Autoresponder only sends an email the FIRST time the form is created, and does not activate when a form is edited? Could this be the problem perhaps?

You are correct, the autoresponder is only sent out the first time a user fills out and submit the form but when the form is updated using the edit link only the email notification is sent out.
