I've recently been having clients have issues with my forms - either not appearing, or not being able to complete them on their mobile devices... is there something I can do to ensure the forms will work across mobile devices?

Could you please provide us more information of the problem they are having? Are they getting error messages? When you say not appearing, is it just a blank page? If so, may we know if your form is embedded on a website?
I checked your form URL and it displays correctly in my mobile device.
I was then redirected to the Paypal page to continue purchase:
If your users are having problems viewing the form in mobile device, please do make sure that you have enabled the responsive options in your form. To do this, please follow this guide: https://www.jotform.com/help/322-How-To-Make-Mobile-Friendly-Forms-on-JotForm.
You can also try adding the Mobile Responsive widget to your form.
