Accepting any information using regular fields are safe since JotForm uses SSL (secure form) by default. We also have Form Encryption feature.
If you want to charge users credit card manually on a later date, we suggest using any of the payment fields we have in the form builder. Then enable Payment Authorization. This guide explains the Payment Authorization feature and how to enable them https://www.jotform.com/help/292-How-to-Enable-Payment-Authorization.
