How to pass item, shipping & tax information to PayPal?

Is this something I need to setup in Paypal?

I would like the name of the item then tax then shipping to be displayed separately in Paypal instead of just the total of all. Is this a Jotform setting? Thx!

I did check your form and found that you are manually performing all the calculations for sub-total, shipping, GST and Grand Total. Since you are passing this grand total as custom amount to PayPal field, it is not possible to track other data.

What you can do is that you can  pass any information to PayPal by taking advantage of "Custom Field" feature of PayPal. Please check the screenshot below;
