Some of my clients will choose to fill out the application, print the application, and send the payment for the product with check or money order to me. How could we get this done? Could it be done all electronically?

Yes, this is possible. If you require the users to send a check to you, PURCHASE ORDER gateway can be used in your form.
Personally, it would be better if done all electronically.
