I am opening this for David.
We had talked on Twitter and the Dates Difference widget seems to be what would be great for his form(s).
The issue is however that the widget offers to select one of the following:
1. Difference only
2. Dates only
3. Dates and Difference
This suggests that it would be possible to get the number of days between the two dates, and to get calendar values (like 2016-04-25 for example) depending on the setup.
Currently no matter what is selected, the returned format is always:
3 - when returning value as number
Difference: 3 days - when returning value as text.

The dates difference widget is excellent. It also prevents a date prior to the first date being selected. It would also be useful to have a result output as part of the widget.
I could imagine having the dates as a list may be useful to populate a matrix/table or specific fields.
