I have a capture page that gets a person's name and email before they are redirected to a sales page.
After successful payment/checkout... the person is redirected to another jotform where they can sign up for my customer list.
Is it possible to have them removed from the original capture form after they fill out the customer form? If so, how can I do this?

Can you please elaborate more what would you like to do exactly?
Since I'm not sure how you would like to remove data inputted by your customers?
If you can describe a little bit more it would be every helpful.

I can edit the autoresponder email. I just remove the data fields and create my own "welcome email".
What I would like to do is have the customer be removed from Form 1 (the "enter your info for more info" form) after they sign up for Form 2 (the "thank you for purchasing" form).
Is this possible?

First, please ignore my test submission that I did on your form.
Yes, you can edit Autoresponder so it doesn't contain any data you don't want.
So the workflow is like this, somebody comes to your Form1 puts their info and submits.
Then, your customer is forwarded to some another form to continue with filling.
What I don't understand is, if you don't send anything to your customers, through the autoresponder, why you have to remove data from the first form. I mean, that data is not stored anywhere anyway?
