I'm looking for a product that I can use on my word press website.
It should have the capability to place a PDF document on my website and allow any user to access that document, fill in some spaces and sign it. I should have ability to customize document with where I want user to fill in data, etc. Once signed it will be emailed to the user and whomever I specify.
Would also like the possibility to create forms and not just upload PDFs.
Is this possible with your product? Is there a free trial period to make sure it functions as I want it to?
Thanks for your help.

It is possible to create Fillable PDFs in jotform. However, the Fillable PDFs are intended for offline use. So these are not what would be embedded on your website to handle form submissions via the web. These PDFs will allow your users to download and complete your form offline. They can then have the form filled out, saved and submitted to you via email or have it printed and scanned.
What you can embed to your website are the web forms that you can create in Jotform. You can customize the form to your liking and even have your users sign it using widgets such as Smooth Signature Widget.
Here are several guides that can help you get started:
You can also setup email notifications to email the submission to your intended recipient:
You can sign up for a free account to test out all the jotform services. I would like to inform you that all the services available in a paid subscription are also available in the free version. The only limit for the free account is the number of submissions, upload space, and form views. On the Free account, you can receive 100 submissions/month, get 100MB of available space and 1,000 monthly form views. To signup, simply follow this link: https://www.jotform.com/signup

Unfortunately, signature widgets are not yet supported in the fillable PDF form. Normally, once you convert the form, you'll see the regular text boxes where your users can fill up and hit submit. There'll be no option to sign or draw their signature.
Thank you for understanding.
