I would like the form to work exactly as it currently does BUT I want the 'submit' button at the end to send the collected data to an email address for preorders. The client is not ready to accept payments at this time. I really like the auto populating product fields as they are now though.

I think what you were looking for was the Authorization Only payment option.
Check the user guide here: How-to-Enable-Payment-Authorization
When this option is ON on your Paypal integration, you can delay the payment process at a later time -- when you need it.

Thanks for getting back to me so quickly! Please forgive my ignorance, this
is all new to me. My goal here is to have a form where users can choose
how many of each specific product they want, have the totals auto populate,
then send the user information and order information to an email address.
Right now, after choosing 'authorization' nothing seems to have changed in
the process. When I click submit, it either locks up (when tested on the
site) or brings me to paypal when I test it in preview mode. Is there a
less complicated way to get the functionality of a shopping cart without
having to deal with any kind of checkout?

I've cloned and tested your form. I am able to reproduce the same issue that you’re having. When I submit the form it redirects to PayPal instead of Thank you Page. Can you also try to make the arrangements as you see below on your PayPal account?

a client, not for me. She doens't have a paypal account and she doenst
want to accept payment. I entered in my personal paypal account info just
to test the process, but now i'm sort of stuck with it because of that
'products' section.
I just want the functionality of the form as is, but without entering any
type of paypal information at all, is this possible with your software?

If you do not wish to charge your users, you can just use the "Purchase Order" field, that will still allow you to setup products the same way in the Paypal integration.
The Purchase Order is usually used for payments made by check or other manual methods.
Here's how to set it up:
1. First, select the payment field you have added, click the "x" button to remove it (this is because you cannot add more than 1 payment field in your form).
2. You will then be prompted if you would like to keep the products, I presume the answer is "Yes" for you.
3. Then just drag and drop the payment field "Purchase Order" on your left side page.
4. It will automatically load the products you have previously setup (assuming you have clicked "Yes" when asked if you want to keep the products). You will also see that the payment wizard will open, you can set it up again and check your products. Here there's NO 3rd party payment processor involved, so there's no actual payment being made.

in preview, it works. I can successfully submit and i receive the order
email:

I tested your embedded form and was able to recreate the issue. Try replacing the Wordpress plugin embed code with your forms iFrame code:
