The notification is failing on your email address email@example.com because it was added in our bounce list.
Here's a screenshot of it:
Please note that this happens when the recipient address rejects or refused to receive our emails. I have removed it in our bounce list, but please do follow this guide to avoid being added in the bounce list again: https://www.jotform.com/help/208-How-to-Setup-Email-Alerts-to-Prevent-Email-Bouncing-Related-Issues
Please to also make sure that the email is correct and there's no typographical error on it. Also, check if your mailbox has any limitation or restriction on it.
I also checked and some users are indeed getting bounce related issues on Hotmail. Here are some articles and discussions that might help:

Thank you for the response it was very helpful. I had a reference to a wrong *.hotmail address. I also went back to using firstname.lastname@example.org as described in the document. I also was sending the PDF files, I deleted the PDFs and it appears to be working. I did find the emails were going to the JUNK folder.
