Whenever I add a payment option, jotform does display the option I just added, however, when I go back to add an additional payment option I have to start all the way over. Does jotform not save my original option? It's so time consuming and frustrating because I have to start all the way over. Is there anything you all can do about this?

I'm not quite sure if I am understanding your concern correctly.
By default, you can only add ONE payment field in your form. Here's a guide on how to setup a payment field: https://www.jotform.com/help/165-Setting-Up-Your-First-Order-Form
Perhaps what you meant is how you could add the same payment field (with the same options and settings) in another form? Is that what you would like to do? It is not possible to save the settings of your payment integration and apply it to all of your forms. However, you could use the Field Manager app to copy the payment field to another form: http://apps.jotform.com/app/field_manager
You could also just clone the entire form that has the payment integration and edit it: https://www.jotform.com/help/27-How-to-clone-an-existing-form-from-your-account
