    If you are referring the header in the Google Spreadsheet, you have to edit the field's label in the form to edit column's header. This is because each column in the Spreadsheet correspond to a field in your form.

    Note that if you edit a field's label( Change the name of the field), you will have to re-integrate the Spreadsheet.

    What Jotform seriously needs, and this is available in other form builders,

    is the ability to change the field ID to something nice and short and identifiable and then use the field IDs in the spreadsheet header row.
