I want to set up my out of office if you will to show only between a set of specified dates. So say I want it to show on the 27th of may until the 30th of may and then no longer show as of the 31st of may. Is this possible?

Are you referring to the Date field?
There is a way to limit the dates that would only show on the date field's calendar pop-up.
Here's how:

Thank you for the clarification. Yes, it is possible show and hide a particular field on a particular date. You can use the Show/Hide Condition to accomplish this with a date field.
If you do not wish users to select a date, you can just place today's date by default
You just need to create the following condition. When the user select a date or is the dates in question, the text will display or be hidden.
I have created a small sample form that you may review, clone and analyze as you like.
