I've made a subuser to my form. However, this subuser only sees THE date of THE submissions filled. All THE other fields are empty. When I check this on my OWN account, everything is ok and all THE fields are filled.
Why my subuser gets no other fields?

This is most probably because you have not enabled the "Europe Datacenter" option under the Account->Data page in your end.
It is highly recommended that you enable it if you are located in Europe. This is because of the invalidation of the EU Safe Harbor policy. Here's a blog post about it: https://www.jotform.com/blog/178-EU-Safe-Forms-Our-Solution-to-the-EU-Safe-Harbor-Invalidation.
