We already use JotForm to collect details regarding various services we provide to raise money for our rescued animals. Some of these services require a booking (field trips, traveling events, and onsite parties).
Currently our customers must submit the form so I can acknowledge if we are available. It would be nice if there was a service that could integrate with the form so our availability would be known instantly.
We are a rescue facility, so budget is extremely important! Any ideas?

I'm not quite sure what you are looking exactly. Do you want to be informed immediately once a user submits your form so that you can respond immediately if you are available?
If so, there are email alerts that you can setup on your forms, I presume you are already aware of that. Here's a guide to learn more about it: https://www.jotform.com/help/30-Explanation-of-Email-Notification-and-Autoresponder-Settings

Basically I need a way so the form only allows the user to select date & time slots that are available.
It cannot be based on past form submissions because not all form submissions make it to the booked stage.
Please advise if this is possible or if I need to look for an alternate solution.

It might be possible to use an Appointment Slots widget field where you can add custom items with limited slots.
If someone changes their mind, you can add back the previously selected appointment slot by increasing its counter by 1.
