How to disable options previously selected by other people

I am working on a sign-up form, where I only need one person per spot. Is there a widget that would eliminate an option from the form if it has been selected already?

Yes, you can use any of the following widgets to control the number of times an item can be selected:

Based on what you have described, I assume that each person will be allowed to select only one of the available options. Additionally, each option should be available for one person, and once it is selected by someone, it is no longer available for other people.

If the above is correct, it may be best to use the Gift Registry widget. Then, set it up to have Max Selection of 1, and also use {1} as the number of items:
