I'm using the Payment plugin on this form:
When the customer is redirected to paypal... once they have made a payment will they be redirected back to the success page that I dictate in the jotform settings?
If not how can I make it so...

After payment, the normal behavior is that the user should be redirected to http://trident-fitness.com/joining-thankyou which is the Thank You page you have set to your form. Are you embedding this form to a webpage? If so, please give us the url of the page so we can check.

I have cloned your JotForm to my account and tried making a payment using Sandbox account. I see that the Thank you page is already set to redirect to http://trident-fitness.com/joining-thankyou on your form.
After making the payment the form is being directed to the provided Thank you page. However, since PayPal cannot redirect to the Thank you page automatically, it displays a link in which the user need to click on it to continue after making the payment. Please see the screenshot below:

This is frustrating as you can not measure the conversion via Google
Analytics. Do you have any suggestions?

If you are looking for the analytics data of you form, you can try to integrate it with Google Analytics using the Google Analytics widgets. You can also try the Form Analytics feature of JotForm.
