How can edit the email responses to go to certain people with certain fields?

I have two main questions: 

1) How can I make certain responses go to certain emails and not others depending on the fields selected? 

2) In the email responses it shows me some fields that do not exist on the forms and other fields that are on the form don't show in the email reply. How can I fix this?
