Once a form is submitted we need to categorise and add comments to each submission. I don't want these fields appearing on the form the user sees on the web. I do want to be able to edit once submitted.
I could not find anything obvious on Support. Is there a way to achieve this?

You could use a google spreadsheet integration where you could store the form submission and append the fields that you need. Just don't change the part of the form that is received from integration.
As you can see the fields in the red rectangle are added manually. Those fields will only be seen when you open the spreadsheet.
