I need to be able to show people a total, but I can't seem to get the "order total" to actually appear, even when I select the options. And then when I click "submit", the form goes through but it doesn't take me through to PayPal (shouldn't it follow up by linking to PayPal so i can log in, etc.)?

The form will only redirect to the Paypal page if the Custom Amount is filled or greater than 0. Since the amount from the "Order total" isn't being passed to the paypal field, the custom amount will remain 0, and it will not redirect to the Paypal page.
The issue seems to be due to a setting in the "Order Total Due" field. This field will only calculate if all the fields have been filled.
To resolve this, please uncheck the option seen in the screenshot below:
The Order Total Due should now calculate and pass the amount to the paypal field even if only one of the products is selected. Here's a cloned demo so you can see it in action: https://form.jotform.com/62000904385953. Regards.
