Our form at some point started taking users through a captcha step before proceeding to the designated URL of the thank-you page even though I can't remember activating that as an option, and I can't seem to find where in the settings I could turn that off. I didn't insert a captcha field in building the actual form, and I am not sure where else a captcha step could be added

This is shown when you have embedded your form using the source code, then may be that you have updated your form in the Form Builder without re-embedding your form.
I would suggest you to re-embed your form so you get a fresh copy of your form, it should not be necessarily a visible change, but maybe that you've added an integration or updating a recipient email address.
Please update your code and do let us know if after doing that the form is still asking to fill the captcha before to show the thank you page.
