How do I add special options to products

Hi. Could you explain this in more detail? I would like to do something similar: give users the option to choose free collection from 2 different locations in addition to post delivery.

With the new payment UI, the process is the same it just looks a bit different.  Add your shipping as a separate product, then add an option to the product:

Then setup your shipping options:

You can make the shipping product required to ensure that a shipping choice is selected.  Here is a quick test form with only a shipping product added to a payment field:
