    Can I add a field where I/user input an email address and a copy of the submission will be sent to the address provided?

    Yes that is possible. You can add email field to your form and create a form Autoresponder email. Inside of this guide you can find how to create form Autoresponder email:

    Once you create Autoresponder email, inside of Autoresponder  Advanced settings set Yes for PDF Attachment option. 

    After that your users will receive email with submitted data and with PDF report, once they submit your form.
