If I am taking registrations for classes and I set limit for the class to say 20. Is there some way to stop a person then registering for all classes on the same day as they run concurrently i.e. only allow them to register for 1 class perday?

You can limit the current user to submit only once by detecting the user as a unique user.
Please refer to the user guide: How-to-Set-Unique-Submissions-on-a-Form
What this feature do is, it will restrict the end-user to submit the form once only. They will never be able to submit the form again on the same network or computer.
Unfortunately if the user will really intend to redo submission again, they can do it if they change IP address or clear the browser cookie.
Hope this help. Let us know if there is more we can help you with.

This will not help. My question is that there are say 10 options for day 1 and user can only pick one. I would like to combine this with the widget appointment slots or something similar

If I understand you correctly, you have multiple courses in a single day. You would like the student to select only one course for that particular day.
With the APPOINTMENT widget, you can limit the number of selections a user can select. You would need to enter all the courses of a particular day in a field. IN the wizard, you can select the number of max selection a user can select from the options. In this case it would be only one.

Thanks that might help in another situation but not this one. The first part you have understood correctly. However regarding the second one I also need to limit the class size to say 20. The is number I would use rather than 1. Not sure if solution this

It seems that your last post did not get submitted correctly. I think there is a missing part of your message at the end.
The number allowed in each class can vary and you can modify it by changing the number, in brackets, in the widget
In the MAX SELECTION, you just need to enter the number 1 and it will only allow the students to select one option in the particular widget.

Thanks Victor that has helped as per my question but now as I have only 1 field for day 1 courses I cannot link a specific course to a price as the courses are different prices i.e. I want to multiply course 101 by $120 and course 2 by $150 but do not seem to be able to do this

You can conditionally do it, like the following:
I've cloned your form and made the changes, check it here: https://www.jotformpro.com/form/62037332947962.
