How do I create event polls in to a Jotform?

I would like to incorporate a couple of event polls in to a Jotform which will allow our users to select from a variety of times for different events. It is important that we can cap each time when it reaches a specific threshold. I have been looking at your FAQ's and I can't find a way to do it. 

Any help would be greatly appreciated!
