Change return email when creating form for another person

If I can understand correctly, you want to edit the email template that is sent to your submitter, this will be possible by first opening the emails wizard, click on the "Emails" icon while on the  Form Builder, then click on the "Edit" button, to get the button you will need to place the mouse over the email: 

Then you will get a window similar to the one shown below, there you can change the email that is sent to your submitter upon submissions:
