in our case a few people might be making/changing entries into a form before it's finally done.

Yes, it is possible to edit the submission. First, the administrator of the JotForm account can edit the form submissions in the Submissions page. Here's a guide: How-to-Edit-Submissions-Made-on-Your-Forms
You can also put an Edit Submission link to the Autoresponder or Email Notification. Here's a guide: How-to-Let-Users-Update-Their-Form-Submissions-at-a-Later-Date
Lastly, you can share the edit link to other as long as you have the Submission ID. In the Submissions page, click the "options" icon and then enable the ID. This will show up the submission ID. You can now use the Edit URL, just change the submission ID in this example.
