I have tested the Stripe integration to edit the products on one of my existing forms and I was able to edit them without any issue. I have also tested with a new form which worked well. However, I am able to replicate the issue when I cloned your JotForm to my account to edit the products. The issue seems to be form specific.
Could you try accessing the old wizard to edit the products by accessing the form after adding &old in the URL?
If you do not have any existing form submissions, you may remove the payment field and try adding the products again.
