I want that once a form has been filled and submitted it gets sent to the concerned manager by email and the concerned manager should sign the form and submit it. I don't want the user to see the authorization information required to submit the form

I would suggest you to send pdf of form submission to email, it can be done in two different ways:
First way is you can setup email notification, and under email tab, add the PDF link to your email.
The second way is, you can check the option to attach PDF under ADVANCED tab.
Once you (or Manager) will get the pdf in email notification, they can sign that pdf. And accordingly they can edit form submission
You can also add a "File upload" field from "Basic fields" on your Form, and can hide it.
Your front-end user will not be able to see that "File upload" field. But once, you (or manager) will edit the form submission, they will be able to see that file upload field. And can upload the signed pdf while editing the form submission.
