To my understanding, you would like to change the sender email address that would show in the email of the respondents after they submit your form, is that correct?
Here's are some of the guides that will help you have your email address as the sender of your notification/autoresponder.
If you want your email notification/autoresponder be sent to a specific email address base on the selection your respondents made on your form before they submit it, I suggest you check this guide, How-to-Send-Email-Based-on-Selection
