Can we set up a cut off amount for each club in our product? If I enter the quantity, once we reach that it will be unavailable to register more?

Yes it is possible to achieve your requirement. You may like to take a look at our "Gift Registry" and "Quantity Gift Registry" widgets and see if this fits into your requirement. These widgets will allow you to set a counter for each items.
