I have an employee that has an apostrophe in their last name and cannot receive notifications from my forms. Is there any way around this?

I believe that you are referring to the email address email@example.com. I see that the email notifications to this address are failing. I have checked that the email address is not in our bounce list. I ran few tests to send the notification to the email address with an apostrophe that were failed.
Let me forward the issue to our backend team to take a look. You'll be posted here once we receive any update in this regard.
