Hi I want to know if it is possible with the checkbox feild to make sure the client can only select 1 of my 3 options. (Make it imposible for them to check 2 boxes)

There is a warning message when a user selects more than the allowed number of items, you can change the maximum and minimum entry of items in the "Edit Properties" window:
If you would like to prevent your user to actually select other options, then I believe you should use the radio button instead.
Here's how it looks like, you can see that I can only select one item at a time:
However, I see that you have existing submissions on your form, if they are not test submissions, then please note that removing or deleting a field will also delete the data associated with it. So if you delete the check box, then the data associated with it will also be deleted.
