We cannot actually convert one field type into another, but we can always replace it with a new field.
What this means is to simply remove your old Text Box field, and add a new Drop Down field in its place - naming it with the same label. The following animation example shows how to do this:
Keep in mind that removing a field from your form will also remove all the data that was collected through this field. This means that if you've previously received submissions through the original Text Box field, removing the Text Box field would also remove the answers collected through this field in your submissions.
If you want to preserve this data, but use a Drop Down instead of the original Text Box field, then instead of deleting a field you can simply mark it hidden, and add a new field in its place:
