I have some text to add as instructions next to where the user fills out data. I've used the Heading feature to add in the text. Is there any way to unbold the heading?
What are other ways to provide content on the forms?

You can unbold the heading by injecting this css code to your form:
font-weight: normal !important;

Your 2nd question isn't clear to me. Do you mean adding default values or descriptions to your form fields? If so, that's possible.
When you select a question, click on the "Default Value" button on the toolbar. You can also use 'Hint Example' for hints and 'Hover Text' for field descriptions.
