How do I make sure a PDF version of a submitted form is emailed through & stored as well?

First, you need to make sure that the PDF attachment option is enabled in the Notification or Autoresponder. After that, you need to test the functionality by manually opening and completing your form. Check your email and verify if you received the autoresponder with the attached PDF or not.
We don't have a way to check if the form submitter received the autoresponder or not. We only have a mail logs that shows the emails being sent to your account. Here's a guide: https://www.jotform.com/help/293-How-to-View-All-Your-Form-Email-History.
Form submissions are being stored on our servers. You can check it in the Submissions page where you can export it to a PDF file. Please refer to this guide: https://www.jotform.com/help/73-How-to-Download-Form-Submissions-as-Excel-CSV-PDF.
