How do I generate numeric values from non-numeric entries?

My form is designed for our printing services, since the final product requires the entry of several criteria (size, weight of paper, color of printing, duplex, finishing, quantity, etc.) I want to gather numeric values based on these categorized selections and then calculate a rough estimate from them. How do I generate numeric values from non-numeric entries?
